Nishikanasa Soba Noodles

The soba at this restaurant is made fresh from scratch daily. The process begins with grinding Hitachi Akisoba buckwheat flour with a stone mill, kneading the dough by hand, and cooking the noodles on an order-by-order basis.
Juwari Soba, made using 100% locally grown Hitachi Akisoba buckwheat flour, is a great option for first-time visitors.
The restaurant also offers a soba workshop for a memorable way to try the area's famous noodles.
