COLK features a course menu based on French culinary techniques, respects French terroir, and elevates ingredients sourced from Ibaraki Prefecture with a unique sensibility. The restaurant carefully showcases the seasonal bounty, including fresh vegetables from contracted farmers, Hitachi beef, and seafood delivered directly from the port.
The restaurant uses a custom-made, triple-chamber stone oven. Understanding the unique qualities of each heat source and selecting the right one for each ingredient brings out the depth of flavor and texture. The open flame from the burning wood imparts a fragrant, natural aroma, while the radiant heat from the stone oven delivers gentle warmth.
The interior is composed of four distinct areas, centered around a spacious main dining area with a seven-meter-high ceiling, complemented by quiet private rooms, a comfortable bar counter, and a warm sub-dining room.
